The Making of Nyonya Kuih Koci

Kuih koci is one of the traditional desserts in the community of Peranakan Chinese, or well known as baba-nyonya. Basically, kuih koci is a steamed dessert consists of glutinous flour and grated coconut with palm sugar. With banana leaves, kuih koci will be wrapped into the shape of pyramid.

To make such awesome desserts, everything is agak-agak, the recipe is:

Ingredients for dough:
  • 3 packets (1.5kg) of glutinous flour a.k.a tepung pulut
  • Approximate amount of water
  • Clitoria a.k.a Bunga Telang (for natural colouring)
  • 4 pieces of pandan leaves
  • Plenty of banana leaves
  • Some sugar

Ingredients for filling:
  • 2 grated coconuts
  • 1 packet of palm sugar a.k.a gula Melaka
  • 1.5kg of glutinous flour a.k.a tepung pulut
  • Approximate amount of water
  • Some salt

and last but not least, a whole lot of love! Now, let me show you the step by step "tutorial" on how to make the kuih koci.

First, boil the Clitoria, then leave it to cool and strain.

Next, we'll start with our filling. Smash the palm sugar into pieces. I mean it, smash it! Just imagine those are your enemies' heads. *wink wink*

Boil the gula Melaka along with the pandan leaves for a better aroma.

Add the grated coconut into fully melted gula Melaka and cook it until it thickens. Then, add a pinch of salt too!

Now we are done with our filling, we'll proceed with the skin of kuih koci. To make blue colour dough, pour the boiled Clitoria liquid into 500g (1 packet) of glutinous flour.

Add a little bit of sugar, then mix everything with your magical hands.

For white dough, mix 2 packets (1kg) of glutinous flour with water.

Dip the cut banana leaves into a huge pot of boiling water for a few minutes (based on your desire).

Flatten a piece of white dough and fill it up with the aromatic sweet coconut filling.

Ball up the dough and add a small piece of blue dough for contrast. Rub the dough with palm oil.

Place the dough into the pyramid banana leaf and fold it.

Arrange the undone kuih koci into a steamer and steam it for 15-20 minutes.

After "long" waited 15 - 20 minutes, you may enjoy the marvelous outcome!
